  • very good quality, high yellow pigment content

Description

EBNERS EINKORN (Triticum monococcum L.) belongs to the oldest cereals and is suitable for nutrient-poor marginal sites. EINKORN is an old, husked wheat species with grass-like growth, very good tillering, soil cover and weed suppression. Ear emergence is about 10 to 14 days later than in spelt. In terms of quality, EBNERS EINKORN is characterized by a high mineral content, high protein content and low gluten content. A high yellow pigment content of beta-carotene gives Einkorn flour its yellowish color.
